  • To make the herb butter, beat the butter, tarragon, parsley, salt, and pepper together until blended. Form into a rough log, wrap in wax paper, and chill.
  • Have a barbecue fire ready. Sprinkle the steaks with salt and pepper to taste and grill them, turning every minute or two, about 8 minutes total for rare, 10 minutes for medium, and 12 minutes for well-done.
  • Top each steak with a slice of the herb butter before serving.
