Romano Bean & Mushroom Salad

Ingredients

3 cups romano beans, cut into 2-inch pieces
2 cups cherry tomatoes, halved
12 oz cremini or white mushrooms, sliced 1/4 inch thick
1/4 cup chopped fresh parsley
8 whole cherry tomatoes, halved
1/8 cup shallot, chopped
1 whole garlic clove
1 tsp grated lemon zest
1 tablespoon lemon juice
1 tbsp red wine vinegar
1/3 cup olive oil
1 tbsp snipped fresh dill
1 pinch salt
1 pinch black pepper

Preparation

Cook beans in salted boiling water until crisp-tender, about 3 minutes. Drain under cold water and let cool. In a large bowl, combine beans, tomatoes, mushrooms, and parsley. In a blender or food processor, process shallot, garlic, lemon zest, lemon juice, red wine vinegar, olive oil, and fresh dill until smooth. Toss with bean mixture. Taste and adjust seasoning with salt and pepper if needed.
