Mighty Parmesan Vegetables

Ingredients

1-1/2 cups water or Vegetable Stock
1 dash salt
1/2 pound (8 oz) snow peas
1/2 lb broccoli floweret, about 2 cups
1/2 lb cauliflower floweret, about 2 cups
2 whole carrots, peeled and cut into thin strips
1 tbsp reduced-fat margarine
2 tbsp grated Parmesan cheese

Preparation

Place the water or stock and the salt in a medium-sized saucepan, and bring to a boil over medium-high heat. Add the vegetables, stirring to mix. Reduce the heat to medium, cover, and simmer for 6 to 8 minutes, or until the vegetables are crisp yet tender.

Drain the vegetables, and stir in the margarine and cheese. Serve hot.
